Extra Mozzerella Cheese, Please!
Those of you who know me, know I rarely cook or bake. But, when I put my mind to it, I can make a mean chicken square or a tasty batch of baklava. Strange, right?!
Jeff had his father visit this past weekend for the NASCAR races. I figured I should cook something rather than having us eat out all weekend.
First, I made pizza dip. Jeff's cousin's wife gave me the recipe. She's made it in Memphis a couple times and we all loved it. It's nice and fattening...which is why it is so tasty. Very easy to make....layer a pie dish with cream cheese. Add chopped onion and pizza sauce. Top with bits of pepperoni and mozzarella cheese, a lot of it (...oh wait, maybe that's my modified version!). Cook for 20 minutes at 350 degrees. Then, enjoy with Frito scoops!!
The pizza dip was an appetizer. The chicken squares were for dinner. I've attached a picture of the recipe. It's a bit difficult to read (can click on it to get a larger version) but maybe I'll type it out if I become un-lazy tonight. :-) This picture is a page out of our Mom's Cookbook that she made all us daughters in 1999. The Chicken Square page, Monster Cookie page, and Chex Mix page are opened the most. =-)

Congratulations, Jennifer and Matt!
My sister, Jennifer, and her now fiance, Matt, got engaged Saturday night at their favorite eatery in Normal, Destihl! We are all so happy for them! This is so fun because as you see here, Jennifer and Lisa are going to be planning their weddings together!
